Soda Bread

 1 large Egg
 1 tsp Bicarbonate of Soda
 2 tsp Honey
 250 g Strong White Flour
 1 tsp Salt
 250 ml Buttermilk
 250 g Plain Wholemeal Flour
 25 g Buttercubed
 50 ml Sheep's Milk Yoghurt
 100 g Porridge Oats

Preheat the oven to 200°C

Mix the dry ingredients together in a bowl and then rub in the butter.

In a jug, mix together the wet ingredients.

Pour the wet ingredients into the dry, and stir quickly with a butter-knife.

Form into a flat loaf and cut an X onto the top.

Bake for 30-35 minutes, or until the loaf sounds hollow when knocked on the bottom.

Tip

If you cannot get the buttermilk or sheep milk yoghurt, then use 300ml of whole milk with 1tbsp of lemon juice added allow the mixture to stand for approximately 5 minutes, until it has curdled before use.
