Goats Cheese on Garlic Bread with Tomato Chutney

 250 g Tomatoes skinned and chopped
 1 small Red Onionfinely diced
 2 cloves Garlic
 1 cm fresh Ginger
 65 g Dark Brown Sugar
 35 ml Red Wine Vinegar
 ½ tsp Paprika
 1 Goats Cheese Round
 1 Ciabatta Loaf
 Butter
 Olive Oil for drizzling
 Salt & Pepper

For the Chutney

Bring the tomatoes, onion, 1 garlic clove, ginger, brown sugar, red wine vinegar and paprika to the boil and then simmer until most of the liquid has evaporated, approx. 20 minutes.

Cool.

For the Goats Cheese on Garlic Bread

Cut the ciabatta into thick slices and butter lightly, toast until golden.

Rub the cut garlic over the bread, and then season with salt and pepper, drizzle lightly with olive oil.

Slice the goats cheese into 2.5cm (1 inch) rounds, place on top of the bread and pop under the grill for 1-2 minutes until the cheese has melted slightly.
