Gazpacho Soup

 5 ½ l Tomato Juice
 300 g Plum Tomatoeschopped
 1 medium Onionfinely chopped
 2 cloves Garliccrushed
 1 Red Pepperdeseeded and chopped
 50 g Cucumber chopped
 175 ml Extra Virgin Olive Oil
 35 ml Red Wine Vinegar
 2 slices Breadcrusts removed and cubed

Combine all of the ingredients in a large bowl or jug, and allow the flavours to marinate for at least 12 hours.

Blend the ingredients until smooth and pass through a sieve.

Season to taste with salt and pepper.
