Bread & Butter Pudding Ice-Cream

 250 ml Double Cream
 250 ml Milk
 115 g Unsalted Butter
 1 Egg plus 2 Yolks
 1 tsp Vanilla Extract
 100 g Caster Sugar
 50 g Sultanas
 25 ml Whisky or Brandy
 Freshly Grated Nutmeg
 75 g Wholemeal Breadcrumbs
 60 g Dark Brown Sugar

Soak the sultanas in the alcohol, you can use water if you prefer not to use alcohol

Melt the butter in a saucepan over a very low heat until it browns, approx. 5-7 minutes, allow to cool.

Mix the breadcrumbs, dark brown sugar, cinnamon and nutmeg together, spread on a baking tray and grill on a low heat for 5-7 minutes, allow to cool and then stir to break up.

Whisk the egg and yolks until light and fluffy, add the caster sugar and whisk until combined.

Add the cream, milk, vanilla and butter. Place in your ice cream machine according to manufacturer's instructions. About halfway through add the breadcrumbs and sultanas.

If you do not wish to eat raw eggs then follow these steps: heat the milk until the scalding point (when small bubbles appear at the outside of the pan) and pour onto the egg/sugar mix - strain and return to the pan heating gently until thickened. Allow to cool before adding the cream and brown butter.

Notes: Adjust the coarseness of the breadcrumbs depending on your texture preferences.
