By 2005 we had applied to build a cheese dairy on the farm, this was completed by 2006 and in the September of that year, we were making our new dairy. We gradually stopped selling our milk to other cheesemakers and expanded our range of cheeses. We currently have nine cheese all unpasteurised ranging from soft to hard and mould ripened. The herd has now grown to 120 and is allowed to free-range all the year round( but they do choose to stay in if it’s wet!!)
